A Note About Our Pizzas
Our pizzas are served whole and uncut. Instead of slicing them in the kitchen, we provide pizza scissors at your table, allowing you to cut each slice exactly how you like it.
This tradition is inspired by Neapolitan pizzerias, where pizzas are often enjoyed with a fork and knife. At the same time, we know many guests prefer to eat pizza by the slice, so our scissors offer the best of both worlds—an interactive dining experience that respects tradition while embracing the way many of us enjoy pizza today.
Choosing Your Pizza
Traditional Neapolitan or Ruota di Carro
We offer our pizzas in two styles, each rooted in the Neapolitan tradition.
Traditional Neapolitan
Our traditional pizzas are approximately 11 inches in diameter, featuring a light, airy crust with a soft center and beautifully blistered edges. This is the classic style recognized around the world and is ideal for one person.
Ruota di Carro ("Cart Wheel")
For those looking for something a little different, we also offer the Ruota di Carro style. Translating to "cart wheel" in Italian, this pizza is stretched much larger than the traditional version while using the same amount of dough. The result is a dramatically wider pizza with an exceptionally thin center and a delicate, crisp edge that extends nearly to the edge of the plate.
Originating in Naples, the Ruota di Carro style offers a unique eating experience, showcasing the contrast between a paper-thin crust and the characteristic airy cornicione (outer rim). It's perfect for sharing or for anyone wanting to experience one of Naples' lesser-known pizza traditions.
Whichever style you choose, every pizza is hand-stretched, baked at high temperature, and prepared using the same carefully selected ingredients and naturally fermented dough.
